Wensleydale Blue Cheese Burger with Caramelised Onions

The ultimate burger for any Wensleydale Blue lovers this summer!

These elevated grilled cheeseburgers are topped with creamy and mellow Wensleydale Blue and delicious caramalised onions along with a rich burger sauce for the ultimate BBQ combination.

Ingredients

For the burger:

  • Minced Beef – ideally 20% fat
  • Wensleydale Blue Cheese
  • 4 Brioche Buns
  • Kosher Salt and Black Pepper

Toppings:

  • Olive Oil and Butter
  • White or red onion – Sliced thinly
  • Red Wine
  • Rocket

Burger Sauce:

  • Mayonnaise
  • Horseradish
  • Method
  1. Season the mince with salt and pepper and form into 4 patties, lightly working the meat together. Set aside.
  2. In a large frying pan drizzle with olive oil and add the butter and place over medium heat. Once the butter has melted, add the sliced onions and cook until the onions begin to soften, about 8-10 minutes. Add a splash of red wine at the end and cook off
  3. Cook the burgers on medium-high grill for 4-5 minutes on each side. Top with the blue cheese for the last minute then transfer to a plate to rest for a few minutes. While burgers rest, grill inside of burger buns.
  4. Make the burger sauce by mixing the mayonnaise and horseradish in a bowl until well combined.
  5. Assemble the burgers by spreading a tablespoon of the burger sauce on the bottom bun, then layer the rocket and the burger on top.  Add the onions and finish with a crumble of Wensleydale Blue Cheese. Enjoy!
