About Wensleydale Blue Cheese

A creamy blue cheese with a delicate, mellow, yet full flavour. Our award-winning Wensleydale Blue is handcrafted at the Wensleydale Creamery, in the heart of the Yorkshire Dales to a traditional recipe using milk from local farms.

Wensleydale Blue is steeped in heritage & provenance; it represents the original, matured Wensleydale cheese that was made throughout Wensleydale by the Cistercian monks when they first settled in the dale in 1150. Due to the conditions under which it was made and stored, the cheese would have naturally ‘blued’.

Flavour Notes

The flavour profile of Wensleydale Blue cheese combines creamy richness with distinct tanginess. The creamy textures melt smoothly on the palate before giving way to a bold tang. This is balanced with savoury undertones, which at times can feel earthy or nutty. Overall, the blend of the creamy, tangy and savoury flavours of Wensleydale Blue make it a versatile and flavourful blend that makes it the perfect addition to cheeseboards and recipes alike.

Pairings

Wensleydale Blue Cheese is a great partner for a wide range of food and drink choices. Some of these include:

  1. Fruit: Serve slices of ripe pear, figs, or grapes alongside the cheese to contrast its tanginess with natural sweetness. The acidity of apples or the juiciness of berries can also complement the cheese well.

  2. Nuts: Pair with toasted walnuts, pecans, or hazelnuts to add crunch and a nutty flavour that complements the creamy texture of the cheese.

  3. Crackers and Bread: Opt for rustic bread, oatcakes, or whole grain crackers to provide a neutral base that allows the cheese's flavours to shine.

  4. Honey: Drizzle a bit of honey over the cheese for a touch of sweetness that balances its tanginess and adds depth to the flavour profile.

  5. Chutney or Jam: Pair with a tangy chutney like mango or cranberry, or try fig jam or quince paste for a sweet and savoury contrast.

  6. Charcuterie: Serve with slices of cured meats such as prosciutto or salami to add savoury depth and richness to the tasting experience.

  7. Wine: Pair with a bold red wine such as Cabernet Sauvignon or Syrah, or you could even try a sweet white wine like Riesling or Gewürztraminer to balance the cheese's tanginess.
